Grilled Oyster Rockefeller – Smoked bacon béchamel, spinach, nduja breadcrumbs, and Osetra caviar, paired with Emmolo Sparkling No. 8, California.
Charred Halloumi – Farro, shaved radicchio, fennel, sliced apple, lemon zest, wildflower honey apple cider vinaigrette, paired with Mer Soleil ‘Reserve’ Chardonnay, Santa Lucia Highlands 2023.
Caymus 50 Braised Kobe Short Rib – Black trumpets, golden chanterelles, and Acquerello risotto, paired with Caymus ‘50th Anniversary’ Cabernet Sauvignon, Napa Valley 2022 and a tasting pour of The Vinekeeper Cabernet Sauvignon, Napa Valley.
Madagascar Vanilla Panna Cotta – Callebaut white chocolate, raspberry coulis, cappuccino dust, paired with Red Schooner Voyage Malbec, Mendoza, Argentina.
